Love Berries


Today is my anniversary and I wanted to make a special dessert for my husband and I. I was thinking chocolate chip cookies since those are a family favorite, but while I was walking around the store I saw that strawberries were on sale and I mixed the two together and came up with "Love Berries". This seems like a really decadent special dessert, but it is super duper easy. 

Ingredients:

  • 1 carton strawberries
  • 1 cup chocolate chips
  • Wax Paper
  • Cookie Sheet

Directions:
  1. Rinse strawberries and dry completely with a paper towel
  2. Cover a cookie sheet with wax paper
  3. Put 1 cup of chocolate chips (I used milk chocolate but any type will do) in a microwave safe bowl and heat for 30 seconds
  4. Stir completely and put back in microwave for another 30 seconds
  5. Stir completely again and put back in microwave for another 30 seconds
  6. Stir completely and dip a strawberry in the melted chocolate with a swirling motion when covered place on wax paper
  7. Repeat this process until all strawberries are covered in chocolate
  8. Place in refrigerator at least 10 minutes or until ready to eat
These are delicious, look spectacular and are probably the easiest dessert to make! You could put a twist on the classic version by drizzling them with white chocolate by melting it in the same fashion and placing it in a ziplock bag with the tiniest bit of the corner taken off and moving the bag back and forth across the berries. 


The Perfect Pancake


Ingredients
  • 3/4 cup milk
  • 2 tablespoons white vinegar
  • 1 cup all purpose flour
  • 2 tablespoons white sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 egg
  • 3 tbsp butter, melted
  • 1/2 tsp vanilla
  • 1/2 tsp cinnamon

Directions

  1. Preheat a griddle to 350 degrees
  2. In a cup put the milk and vinegar together and set aside while combining the rest of the ingredients. This will turn the milk curdly into a fake buttermilk.
  3. Combine all of the dry ingredients in one bowl and mix together with spoon.
  4. Using a whisk combine the melted butter, vanilla, egg and "buttermilk".
  5. Put all ingredients together in large bowl and mix until lumps are gone
  6. Using a 1/4 cup measuring cup drop batter onto heated griddle and cook until bubbles appear.
  7. Flip pancakes and cook on other side.
This recipe will yield 10 pancakes. I usually double the recipe for my family of 6. Sometimes we have leftovers that can be frozen and then reheated in the toaster.
